Extremely Delicious Salted Egg Cereal Prawns

I stumbled upon this very nice video tutorial from jiaksimi.sg on how to cook Cereal Prawns. I find it easy to follow and it really looked very appetizing. With this inspiration, I cooked my version of Cereal Prawns with an extremely delicious salted egg sauce from Irvin’s and it definitely made our weekend. Look at how mouth-watering this dish is.

Irvin’s shop claims to be an expert on any food with salted egg. My peers and family have proven that it truly is the best in town.  Aside from salted egg sauce that you can use for your home-made cereal prawns or chili crabs, Irvin’s also has two popular salted egg snacks: potato chips and salmon skin. I have also tried these snacks and they are to die for, I swear!

Cereal Prawn (麦片虾)
=================

Cereal Prawn (aka 麦片虾) is a constant favourite in many restaurants or zi char stalls in Singapore. People love them, so do we for the simple reason that they’re so sinfully satisfying. There is always something special about deep-fried prawns coated in butter cereal.

In this dish, we prefer the use of chili padi over normal chili and fresh curry leaves are added to give a slight kick to the sweet savoy butter cereal prawns. A drool-worthy favorite for anyone to cook any day!

Ingredients

10 Large prawns

1 tsp Salt

1 tsp Pepper

1/2 Egg

1 tbsp Plain Flour

1 tbsp Corn Flour

1 tbsp Sugar

20 Curry leaves

4 Chili Padi (chopped)

50 g Unsalted butter

1 tsp salt

1 cup Cereal

1 tsp chicken powder

1 tbsp milk powder

Directions
========
cut and clean the 10 prawns

trim legs and devein prawns

add half a beaten egg

add 1/2 tsp salt, 1 tbsp plain flour, 1 tbsp corn flour

deep fry at 170 degrees C for 2-3 mins

drain and set aside

pluck 20 curry leaves

cut 4 chili padi

fill bowl with 1 cup cereal, and add 1 tbsp milk powder, sugar, 1 tsp salt and chicken powder, then mix

melt 50g of butter in pan, add curry leaves, then chili padi

add cereal mixture and fry

add prawns and mix well

 

Wondering when to add your salted egg sauce? After you’ve done all the procedures in the recipe, simply mix in 3-4 spoonful of Irvin’s ready-to-use, salted egg sauce in your fried prawns cereal mixture and your special dish is ready to serve. Enjoy!
